Mouth Watering Healthy Vegetarian Blueberry Muffins

There is an old saying that the way to a man’s heart is through his stomach. I would argue that blueberry muffin goodness has no gender boundary and that these little babies are about as good as it gets. The obvious attraction is fresh blueberries, either raw or cooked in food have a rare, rich, explosively delicious taste. And to seal the deal, blueberries not only inhibit cancer, they apparently can ever cure cancer once it begins. Now that the blueberries are at peak season in the north country, it’s time to take advantage of their incredible flavor and health benefits.

Recently Donna cooked up a batch of melt-in-your-mouth blueberry muffins without the trans -fats and extra sugar you would find in store-bought or bakery products. And you know what? How real is the threat of climate change to our world? Many Americans are not convinced that we have much to worry about and at least any time soon. The world isn’t coming apart at the seams, or is it? Massive wildfires in Russia are being pushed by record blistering heat waves and drought, and being fought by 240,000 firefighters. Floods recently killed over one thousand in Afghanistan, created a humanitarian food crisis as a result of epic rainfall. These are the kinds of events predicted by climate change models over the past 25 years and as we continue to endure the hottest year on record globally, one has to wonder how much worse can it get? Over time, it will get much worse.
National Security Advisors right now see global climate change as a grave threat to national security, now and in the future. A study group of U.S. military advisors included General Gordon Sulllivan Former US Army Chief of Staff, Rear Admiral David Titley, who is an Oceanographer and Navigator in the US Navy, Vice Admiral Dennis McGinn and James Woolsey, Former CIA Director. They are concerned about rising sea levels, droughts, flooding, agriculture and melting ice having catastrophic impacts on national security now and in the near future. A Delightful Summer Pasta Dish: Kate’s Checca

Imagine a pasta dish that combines fresh tomatoes, basil, black olives, mozzarella and garlic into an absolutely delightful meal. The steamy hot cooked ingredients are mixed with the cheese and meld (and melt) flavors together to please the most discriminating palette.  We rate this as an award-wining pasta dish that we serve over and over. Those of us who have lived in the northeast for a long time can unequivocally say we can’t remember such a blistering summer. Around here if it hits mid to high 80s it’s usually not for long and it is not uncommon for the mercury to surpass 90, but rarely does the heat wave last for weeks. In this humid region of the country it is unusual to endure days in the 80s with little cooling at night, for weeks at a time. So after a stretch of unbelievable unrelenting heat we begin to wonder, is it me or this an unusually hot summer?

Come to find out, NOAA, the federal National Oceanic and Atmospheric  Administration, says we are in the middle of what is so far, the hottest year on record.  Keep in mind that NOAA scientists are not whacked out treehugger subversives with any particular bias when it comes to climate change. They are climatologists who look at LONG TERM data, over hundreds of thousands of years when possible and in this case weather data, and then report it as they see it.

According to the NOAA National Climatic Data Center (NCDC) “The combined global land and ocean surface temperature was the warmest on record for May, March-May (Northern Hemisphere spring-Southern Hemisphere autumn), and the period January-May according to NOAA. Worldwide average land surface temperature for May and March-May was the warmest on record while the global ocean surface temperatures for both May and March-May were second warmest on record, behind 1998.”

A Splash Of Solarfest

Every year in Vermont we have a New England renewable energy festival known as Solarfest. Sited on the unforgettable Forget-Me-Not Farm on a south sun-facing hillside in picturesque Tinmouth, Vermont, Solarfest is a vibrant display of what you can do with a little sun, smart people, good food and music, all POWERED BY THE SUN!

There were over 85 educational workshops covering renewable energy, green building, thriving locally and sustainable agriculture. Solarfest offers fun and interest for all ages. This year Solarfest was bigger and better than ever.

Bogstomper’s Kickin’ Tunes At SolarFest

What do you get when you throw a renewable energy festival on the Forget-me-Not Farm in Tinmouth, Vermont for three days of information, camping, solarizing, socializing and celebration in July? Solarfest! Here is the first of several blog posts featuring some of the exhibitors and characters at Solarfest this year. I think some of the best performances shine from impromptu jams from exhibitors and folks who just love to play music.

Shrimp On The Barbie (And Veggies)

One of my absolute favorite healthy summer dinners is shrimp kabobs, with veggies of course. For those who eat animal protein sparingly, shellfish such as shrimp is low in saturated fat, high in protein, selenium and vitamin B12. And if that is not enough to get you excited about it, it is delicious hot off the grill. It is a surprisingly quick preparation, inexpensive, and would easily cost up to $100 at your favorite restaurant. Still need some more inspiration for ‘shrimp on the barbie”? Enjoy the quick clip below starring Jim Carey from the movie Dumb and Dumber.
Here is the quick and easy recipe:
Cut into roughly 1 inch square pieces:
1 red pepper
1 green pepper
8 Baby Bella or whie mushrooms
2 yellow or sweet onions
Marinate veggies with a sprinkling of balsamic vinegar
Peel 1 pound jumbo shrimp
Marinate with olive oil, lemon juice and dijon mustard
Soak bamboo skewers in water. Skewer the shrimp separately as they don’t take as much time to cook as the veggies and alternate the veggies on other skewers. Cook veggies over medium-low grill for 5 minutes on one side until they soften, then flip over. Add skewered shrimp and let them cook for 2-3 minutes untill they become white, then flip over for a minute. Serve with rice and voila! Let us know how your shrimps on the barbie turn out!
